Basic Definitions ( what is ayam geprek and ayam penyet )

First and foremost, Ayam geprek The word geprek itself means “to smash” in Indonesian. The chicken is cooked deep-fried in this dish until it becomes crispy and then smashed with a pestle and mortar. While for Ayam penyet The word penyet means “to press” in Indonesian. In this dish, fired chicken is lightly pressed ( not smashed hard ) to keep its crispy outside while maintaining its tenderness and juiciness

The sambal is placed on top or served on the side and the chicken is gently pressed to release a little juice without losing its texture.
